Ahhhh Mussels!


 So did you notice my deliberate error last week! I said that 'all I wanted was muscles', but couldn't find where to buy them. Quite by chance during the week I discovered that I was searching for the wrong type of muscles. On changing the spelling to mussels I immediately found what I wanted.

It's not always easy being dyslexic you know!

Back to the week just past. Work was completely frantic, we're all falling apart a bit at the moment. I've no idea if it will get any better. However, I am still finding it easy most evenings and weekends to shut down from it and that's the most important thing.

On Wednesday husband and I had a rare midweek night out together. When I say rare I mean it - it was probably about the 4th midweek time we've been out together since my son was born nearly 16 years ago!

For husbands Christmas present I purchased tickets to go to Reginald D Hunter at the Dome in Brighton. We'd never seen his live material, but often catch him on panel shows and he always cracks us up.

It's obviously been a while since he's been on a panel show, because on those he's in his 30's and looks very dapper in a suit. So we were somewhat surprised when somebody about the same age as me turned up and they were in a Hawaiian (gosh that took a long time for spell check to unravel for me) shirt and jeans.

The other thing that was startling was the content of the show. On the panel shows he's got a biting sense of humour, but it's always clean. When he's doing his live show it was incredibly blue! I'm known for being extremely open minded (too open minded I'm told often), but even I had my head in my hands on about 4 occassions.

Anyway, we really loved it. I look forward to catching his next tour.

On Saturday a friend came over to celebrate her birthday. When I told colleagues at work what I'd purchased for her present they were somewhat startled and asked if I was a stalker. So I was a bit nervous about handing the present over. 

What was it (I hear you ask)... well friend and son have been coming over regularly for about 10 years now and over that time I've collected a lot of photos. So I downloaded those and then went onto facebook and downloaded a load of their photos from there of them and their son. I then uploaded these into a photobook which I had printed out.

Friend was a little startled, but absolutely loved it.... phew!

Also friend is diabetic. I'd spent about a month concocting an idea for a cake (didn't want to do last year's almond flour cake debacle again). The idea I came up with this year was sugar free meringue. For the first batch I used sugar free coffee syrup instead of sugar. It tasted great, but what was created wasn't meringue. So I went online and found a sugar free recipe that used a sugar replacement. I'd still not say it was like a 'proper' meringue, but it was definitely closer. 

With so many trials I ended up with about 6 layers of meringue attempts. I decided to use them all, So I tiered these up with double cream between and strawberries. It was actually very nice, but given that it took around 18 eggs and hours of my time, nobody will ever be having that again!
